While preparing meals throughout this Lenten season, I’ve really enjoyed experimenting with various recipes that have eliminated meat.   I’ve modified many recipes – – adding seasonings I like and eliminating ingredients that I don’t like.   I’ve even created my own recipes…adding a “touch” of this and a “pinch” of that; never truly measuring anything.  Last week I decided to make vegan cornmeal muffins.  I modified the recipe “to my liking” and the muffins didn’t turn out well at all.  Why didn’t it work this time?

Well, for so long I had used my own guidelines and measurements.  I did what I wanted to do.   My favorite line of any recipe had become, “season to taste.”   Many people cook like this all the time and in my experience, most of the time it works, but why didn’t it work with the vegan muffins?   I pondered this….the vegan muffins represent…
